Recipe: Spinach Cannelloni

A very easy dish that your whole family will enjoy.

A delicious mix of Spinach, tomato sauce, cheese and Cannelloni… enjoy!

Ingredients:

SPINACH STUFFING:

  • 1 Tablespoon Vegetable Oil
  • 1 small onion finely chopped
  • 2-3 garlic bulbs mashed
  • 1 pack of Frozen Spinach leaves (around 400g-500g)
  • 1 tsp of Salt
  • 0.5 tsp All Spice
  • 0.5 tsp Nutmeg

TOMATO SAUCE:

  • 1 Tsp Vegetable oil
  • 1 small onion chopped
  • 2 Ripe Tomatoes (peeled and chopped)
  • 2 Tablespoons Tomato Paste
  • 2 cups Water
  • 1 tsp Basil
  • 1 tsp Oregano

BECHAMEL SAUCE: *

  • 5 Tablespoons Butter
  • 4 Tablespoons Flour
  • 4 cups Fat Free Milk (Liquid)
  • 1 tsp salt
  • 0.5 tsp Nutmeg

250 g UNCOOKED Cannelloni tubes (1 pack)

1 CUP Grated Mozzarella

*to reduce time use the Bechamel Sauce packets available in the supermarket


DIRECTIONS: 

1- Start making the Spinach Stuffing

  • Heat oil.
  • Add the chopped onions cook until tender.
  • Add mashed garlic.
  • Add the Spinach. Stir and continue cooking until the spinach has thawed.
  • Add Salt, All Spice and Nutmeg.
  • Leave aside.

2- Tomato Sauce

  • Heat oil
  • Add chopped onions, cook until tender
  • Add chopped tomatoes and stir
  • Add tomato paste, stir and add water.
  • Bring to boil, then reduce to medium heat and continue cooking for 15-20 minutes.
  • Add Basil and Oregano in the last few minutes of cooking. Stir well and set aside.

3- Bechamel Sauce

  • Melt Butter
  • Once melted, add Flour and stir
  • Cook and stir for 5 minutes (Flour mixture should change to a light, gold color)
  • Add Milk and whisk it in the flour-mixture.
  • Keep stirring and mixing until the mixture is soft and not too sticky
  • Reduce Heat.
  • Add Salt and Nutmeg.

 

4- Start Stuffing the uncooked Cannelloni tubes with the cooled Spinach mixture. And arrange the tubes side by side in Baking dish

5- Top the stuffed cannelloni tubes with the Tomato sauce.

6- Follow by topping with Bechamel Sauce.

7- Sprinkle mozzarella cheese.

8- Cook in 180 degree oven for around 15 minutes.
